Hi, my name is Emily, and I am a Nutrition Therapy Practitioner and a certified Nutritional Health Coach. I have a double Bachelor’s degree in Biology and Psychology from the University of Colorado in Boulder, am a Certified Holistic Nutritionist from Pacific Rim in British Columbia, a Certified Nutrition Therapy Practitioner and Master Nutrition Therapist from the Nutrition Therapy Institute of Denver, and certified Nutritional Health Coach through Natural Grocers by Vitamin Cottage.
In a nutshell, I am a former professional dancer and currently an avid outdoor athlete who truly understands the interconnectedness that wholesome fuel and a balanced lifestyle plays on whole-body wellness: mind, body, and emotional wellbeing. Having struggled with (and healed from!) several food sensitivities, adrenal fatigue, SIBO, leaky gut, an eating disorder, and wildly turbulent hormone fluctuations, not only can I empathize with your health frustrations, but I can fully attest to the power of whole, real foods. My primary goal is to empower others with nutrition education and lifestyle recommendations that will give individuals the ability to control their health and (finally!) achieve their goals—sustainably!
I provide my clients with the compassion, education, individualized direction, and encouragement that they need–and deserve!–to succeed.
I specialize in nutrition therapy for:
- digestive wellness
- detoxification
- blood sugar balance
- weight maintenance
- hormone balance
- athletic performance & recovery
- healthy relationship with food
I also have a fascination for the gut-brain connection, and understanding how nutrients can deeply affect your psychological and emotional being. I am currently the Nutritionist at the Snowmass Athletic Club and Midland Fitness/180 Wellness. I teach nutrition classes at Colorado Mountain College, and am a nutrition writer for Climbing Magazine.
“I believe that food is medicine for the body, as fresh air is medicine for the soul, and that fulfillment can be found between every breath and within every moment. My mission is to support others throughout their personal journey to find balance and achieve optimal wellness, and to motivate them to discover passions that will keep them active, happy, and healthy. Ultimately, your quality of life is my priority, and my dedication is to guide you towards your best, most vibrant self.” ~ Emily Ipsen

When I am not fully immersed in all things food and nutrition, I am usually outside backcountry skiing, mountain biking, climbing, river surfing, hiking with my dogs, or rowing my husband on the Colorado River as he fly fishes. In my spare time, I also choreograph the spring musical at Glenwood High School.
Why work with me?
I realized that my calling in life is to consult with others about their health, their struggles, and help empower them with nutrition education to finally achieve their goals. I have over 3 years of professional experience as a Nutrition Therapy Practitioner, and I continue my education weekly by attending webinars, reading the latest research (so you don’t have to), and by collaborating with like-minded health professionals on the latest topics of all things health and wellness. I use a whole-body approach, looking at all aspects of the individual vs. focusing on the symptoms. I take a holistic approach to nutrition and start with basic nutritional foundations, use testing when appropriate, and suggest prescription quality supplements only when necessary.
So–if you’re still here —know that I want to help you get to the bottom of your symptoms. Together, we will come up with a plan that is specific to you and YOUR journey, and we will tackle your challenges and frustrations head-on. As a team.
YOUR success, is MY success.
Now ENOUGH about me…let’s talk about YOU, shall we?
